Privacy policy
Last updated 16 July 2026
This policy explains what personal data Inis Escargot collects, why, and what you can do about it. We keep it short and plain, because a privacy policy nobody reads protects nobody.
Who we are
Inis Escargot, Lisduff, Virginia, Co. Cavan, Ireland. We are the data controller for the information described here. For anything in this policy, email info@inisescargot.ie.
What we collect, and why
| What | Why | Lawful basis |
|---|---|---|
| Name, email, delivery address, phone | To take payment for, and deliver, an order you placed | Performance of a contract |
| Order details and history | To fulfil your order, handle returns, and meet tax law | Contract, and legal obligation |
| Your message and email via the contact form | To answer you | Legitimate interest (replying to an enquiry) |
| Your email, if you sign up to the list | To send you occasional updates | Consent, which you can withdraw at any time |
| Anonymous usage statistics | To see which pages are useful | Consent, via the cookie banner |
We do not collect special category data, we do not build profiles of you, and we do not make automated decisions about you.
Your card details
We never see or store your card number. Payments are handled entirely by Stripe, and your card details go straight to them. See Stripe’s privacy policy.
Who else processes your data
- Stripe, payment processing.
- Elastic Email, sending your order confirmation and our replies.
- Cloudways / DigitalOcean, hosting this website and its database.
- Google Analytics, anonymous usage statistics. Only if you accept analytics cookies.
We do not sell your data, and we do not share it with anyone for marketing.
How long we keep it
- Orders: six years after the order, because Irish tax law requires us to keep records of sales.
- Contact form messages: up to two years, then deleted.
- Newsletter email: until you unsubscribe.
- Analytics: as configured in Google Analytics, and only where you consented.
Your rights
Under the GDPR you have the right to: get a copy of your data; correct it; have it erased; restrict or object to how we use it; get it in a portable format; and withdraw consent at any time. To use any of these, email info@inisescargot.ie and we will respond within one month.
Erasure has one limit worth being upfront about: we cannot delete an order record we are legally required to keep for tax purposes until that period has passed.
If you are unhappy with how we have handled your data you can complain to the Irish Data Protection Commission, dataprotection.ie.
Where your data is
Our website and database are hosted in the EU. Some of our processors (Stripe, Google) may transfer data outside the EEA under the European Commission’s Standard Contractual Clauses or an adequacy decision.
Cookies
See our cookie policy for what we set and how to change your mind.
Changes
If we change this policy we will update the date at the top.
